"Die Wachtelei" combines a relaxed ambience and perfect service with pleasantly unagitated top-class cuisine. This is mainly down to head chef Daniel Rundholz, who has been attracting numerous gourmets from near and far to the restaurant since March 2014.
Seasonal cuisine with a regional focus and exotic influences form the basis of his delicious creations. In cooperation with an ambitious organic farmer, the chef has dedicated himself to rediscovering "forgotten delights". Flavors of local medicinal herbs and ancient vegetables (such as Jerusalem artichokes, purple potatoes & Bamberger Hörnchen) are imaginatively combined with the "usual suspects" of modern gourmet cuisine. As a globetrotter who has traveled all over the world, Daniel Rundholz brings back interesting ideas from his travels, from which all guests benefit in an enjoyable way.
You are welcome to dine in the conservatory or on our wonderfully landscaped outdoor terrace. Here you can meet not only for dinner, but also for breakfast or coffee and tea time. If you wish, you can also enjoy a rustic dinner in our rustic wine cellar. Surrounded by fine wines, thick walls and solid oak wood, you can end the day here in the best possible way. A popular meeting place throughout the hotel is the fireplace bar between the lobby and restaurant, where you will always find someone to chat with.

Arrival by car:
You can reach the district town of Rotenburg (Wümme) from Bremen or Hamburg via the A 1 (exit Stuckenborstel) and B 75 (exit Rotenburg Mitte). If you are traveling from Hanover, follow the A 27 (exit Verden Nord) and take the B 215 in the direction of Rotenburg (Wümme).
Arrival by public transportation:
The district town of Rotenburg (Wümme) is very easy to reach by train. The railroad company "metronom" offers a direct connection between Hamburg and Bremen, with Rotenburg (Wümme) as a stopover. The EVB also runs between Verden and Rotenburg (Wümme), making it easy to travel from Hanover or Minden. Bicycles can be taken on all of these train connections.
