Feast for the Palate


Picture: Smoked eel from the Steinhuder Sea Niedersachsen is a country of gourmet food. Culinary delicacies enjoy high status here. Good honest curly kale with Bregenwurst (a German delicacy) and delicious fresh asparagus, as you like it. And the state has much more to offer - prawns, shellfish and fresh fish along the coast, roast moorland sheep joints in the heathlands and hearty cheese roulade in the Harz mountains. The culinary range of Niedersachsen's regions is opulent, unusual and very individual. Every strip of land seems to have its very own specialities. On the coast, many of the ingredients are conjured up from the sea, in the heath the barren sandy soils and the meadows provide the harvest, in the river regions fertile fields and juicy grasslands, in the mountainous Harz, game and the clear lakes and streams provide inspiration for the cooking pots of the local restauranteurs. And they'll be happy to let you look over their shoulder - many of the big restaurants and breweries open their doors to the public to show how the raw ingredients are transformed into delicious local delicacies.
